ffmpeg compile

We are looking for a consultant to write us a step-by-step process that will enable us to successfully compile the latest (or very recent version) of ffmpeg.
- need a Universal Binary version (for Intel Mac & Mac PPC)
- need a version for WinXP/Vista (can do this later in another job if better)
- the final build needs to be a standalone that can be distributed (not dependent on any special configuration or utility).
- support for the usual additional libraries (./configure --enable-shared --disable-mmx --enable-pthreads --enable-liba52 --enable-libfaac --enable-libmp3lame --enable-libvorbis --enable-gpl --enable-pp --enable-libxvid --enable-libx264 --enable-swscaler)
In addition, we would like some example encoding commands, especially expert advice as to the best quality/speed settings for x264 and FLV.
